I got the original recipe from "undressed skeleton"'s blog but hers is not dairy free so I had to revise it. I was not disappointed with the results.
3T almond buttermilk *
2T sugar
2t vanilla
1/2C coconut oil
2C flour
1/2t salt
3T almond milk
Filling:
I used puréed strawberries
*almond buttermilk is made almost the same as regular buttermilk.
1/2 T of white vinegar (instead of a whole T) and then 1 cup of almond milk
Let stand for about 4 minutes and you can refrigerate the leftovers.
Directions:
Using a mixer, blend the first 4 ingredients until there are no lumps remaining.
Slowly add the salt and flour then add the almond milk (add more if dough is too dry.)
Once dough is mixed well roll into a ball and cover in plastic wrap. Let it chill in the fridge for about an hour or until you're ready to use it.
Roll out dough and cut into rectangles (no particular size)
Purée some strawberries or you can use whatever filling you want. Use your imagination. Place a spoonful in the middle of a rectangle of dough and place another piece of dough on top pressing the edges with a fork. (This part is a pain in the butt. At least it was for me as the dough is elasticy and kept shrinking on me.)
Once you are done and ready to bake, place Poptarts on a foil covered baking sheet and bake at 350*F for about 13-18 minutes.
Let cool before eating.
These were a winner with my husband who is never partial to improvising when it comes to making something dairy free... or healthier for that matter. :P
This recipe made 5 Poptarts for me.
